That, my dear friend, is a cheesecake sandwich created by the amazing cake spy, Jessie Oleson. Most days we're all granola and ground flax seed over here but occasionally, I love treating the kids and the husband to a little something like this.

When we get together this summer, I say we indulge in this masterpiece AFTER our 7-mile hike in the Flatirons. Let's raise the decadent factor though by stuffing the inside with Mario Batali's goat cheese cake.
